Pasta Making 101


For FHE we planned to make homemade pasta and cheese....for RAVIOLI! We had a blast! It was surprisingly easy and we already had all the ingredients we needed. {that rarely happens!} Only thing is it took us forever because it was our very first time...and we didn't know what we were doing...soo good thing we made it for the experience and not because we were hungry for some pasta.
Here's how it all happened...

1. First we made a flour volcano and filled it with eggs, water and salt. then we kneaded & used lots more flour so dough didn't stick to our hands. let dough ball sit for 15-30 minutes...or more {we took like an hour break after this point} rolled it out...
cut into cute little squares.
2. Then for the cheesy insides part! We heated milk, added vinegar & then let sit for 10 minutes. Strained out the whey from the cheese curds {through a pillowcase haha...no cheesecloth in this house...and then strained through a colander b/c we got too impatient}...and whhhhaala you have made ricotta cheese!!! yes! Isn't it beautiful??
3. Filled pasta squares with ricotta cheese, parsley and Italian bread crumbs & then sealed them together with a fork. We then heated up some of our favorite spaghetti sauce and boiled some oil and salt infused water. Cooked pasta for 5 minutes.....and.....
4. Again...WHHAALAA 2 perfect plates of yummy homemade ravioli! SUCCESS...we did it! Just call us Mr. and Mrs. Chef Boy-R-Deeeeelicious! Wow, it was way good.

& P.s. Thanks honey for being such a good sport and help in the kitchen! It's so much fun cooking with you. Applause anyone?
